I don’t think I’ve ever met someone who doesn’t like ice-cream. But with a household of lactose intolerant tummy’s, I’ve certainly met bodies that don’t like the traditional, creamy, dairy goodness!
With an Autumn chill in the air (we actually put on a jumper for the first time in six months last night!) and a drizzly grey day, I thought i’d share this very simple alternative that is made literally, from two ingredients! Give it a go before the colder months set in…or grab a blankie and devour this soft-serve style “Faux Ice Cream” anyway. You don’t need any fancy ice-cream makers, it’s healthy, it’s tasty, and you can switch up the ingredients to create any flavour you like.
FAUX ICE-CREAM
Servings: 4
Ingredients:
- 3 bananas, sliced and frozen
- 3 tablespoons Cacao powder (you could use cocoa instead)
Yep, that’s it! So simple.
Directions:
If you don’t have frozen banana ready to go, slice and place in freezer in a single layer for 2-3 hours until frozen.
Add ingredients to a food processor. I added some frozen strawberries that were tucked away in the freezer also. As I said, come up with your own creations including fruits that you enjoy (I don’t recommend switching out the banana though – the banana is the secret ingredient!)
Begin processing ingredients together. You will notice the banana turns into a crumbly texture like you’re making a cheesecake base, and then all of a sudden, right before your eyes, SOFT SERVE! Seriously, it’s like magic. Who thought a banana could be so clever!
There you have it. Dairy free, vegan friendly, healthy, ‘creamy’ Faux Ice-Cream. Get creative with flavour combinations – vanilla extract, coffee, berries – I’d love to hear your favourite flavour combo.
